Question [help] about WP Pages

What I want to do is make a page on say, dog grooming. I want to have one article show up (on a page, not in blog format) and show up in the navigation, but I need about 5 pages to cover the content.

How do I get these pages within a page (with next> and <previous) to not fold out under the menu and to get a >>>Next to show up after each page?

I can't get menus to show up on my nav bar.

I can see 2 places where the Menus work, without installing the skin.
