I want to use Uploaded as a backup. How much storage do I have as a premium user? For how long are my files being kept online?

Storage is unlimited, files are stored for 180 days. Though I have some files untouched from February and they are still active.

It's no good idea because they have a download bandwidth limit for Premium user from 30GB per day + 100GB when you buy premium and all bandwidth can be saved up to 500GB.

20% is deducted if requested amount is less than 100 €.

BTW afaik they do show u notice about 20% deduction when u request payment. looks like u missed it.
