vistor's personal data by webanalytics services - where from?

Webanalytics websites, like alexa.com, offer (rough) information about sex, age, education, occupation, city-country of visitors.

Paid services offer more vast and more refined details of such kind of data per each visitor

Where and how are such data collected?
I think it is useless to ask how legal are such services?

I tried some but I am prohibited to create any of the tags I've tried to use with this post (popup doesn't work) so the keywords are:

Google Analytics also collects some data. If you are looking for some more data about the visitors then I have not heard of any service that provides you with all these details. The most important data is already provided by Google Analytics.
