Which one shall I go for?
Has anyone used either host for dedicated before?

Server Option 1 [Netherland]- [Scopehosts] is good for connectivity.

First off al consider your location of Redswitch, they also have servers within The Netherlands for the same price.
Scopehosts is a reliable webhosting provider so that won't a wrong step either.

it looks like redswitches resells OVH servers for france.

never use OVH-Server for s.th. illegal. They are shut down faster than you can see.
and if - use a reverse proxy and lock-out all OVH-staff by restricting SSH-connections.
