But i cant figure out where to alter the copyright at in ipb 3.0

are you using a nulled board?
if yes, just remove: {$footer_items['copyright']} from the global template.
if no, pay for the copyright removal or just keep it there.

I did read it. The whole copyright is related to IPB. Thats why it's there.

so the data is stored else where
Im looking to find out where

its properly hard coded somewhere good luck finding it
and don't get arsey when people are trying to help
