use some windows flavor and use an encoder that encodesdvd/iso streams to avi or ubuntu with wine etc. you can do it with any linux distro but its pretty in depth and you need to know what your doing i know a few who are using linux servers to distribute and encode full dvdrips into avi mkv etc.
