Don't get me wrong, I like the show, but the show is not the same experience as the books. There is a TON of stuff in the books that you don't get to see in the TV show and there's no way they can put everything in ASoS, AFfC and ADwD in the next seasons.

I'm going to guess the reason that it takes so long is that they probably have to meticulously document the copying of the files to ensure that nothing is missed. Anyone who handles any of it will have to swear to the date, the time, the files they copied, etc. to preserve the evidentiary chain...
